From Detroit Grit to Black Tiger Fusion

Black Tiger Fusion is the next chapter of a Detroit food story that has been more than a decade in the making. 

Inspired by Thomas and Gwen Wilson, Chef Nick and his Aunt Kathy launched The Lobster Food Truck with a vision to bring something bold and different to the streets of Detroit. This culinary fusion concept blossomed from a singular food truck into a thriving brand, expanding into a storefront and stadium kiosks, and even earning a spot on HBO’s NFL Hard Knocks while feeding the Detroit Lions. During its impressive 10-year run, The Lobster Food Truck amassed over $1 million in sales.

Yet, behind this success lies something deeper: Detroit grit. The city taught Chef Nick invaluable lessons in hustle, adaptability, relationship-building, and resilience, all while navigating the challenges of transforming a food truck into a well-loved local brand. These lessons laid the groundwork for the entrepreneur and chef he is today.

In 2025, after breaking his leg, Chef Nick made the conscious decision to slow down, recover, and reflect on the direction of his journey.

By August 2026, Black Tiger Fusion emerged as a representation of Chef Nick’s evolution.
